This article studies how the Pamplona Regiment managed the production and distribution of a product that it considered essential for the population. Because of the long period of time during which this public supply was in force, we will focus our analysis on the first decades of the 19th century, when a municipal board was set up specifically for this purpose. After reviewing the political positions of Barandiarán during the Second Republic, it is examine the notes in his personal diary on the repression of the rebels in Navarra and Gipuzkoa based on the information provided by various witnesses. The first interview was conducted with Roberto Elduayen in 1961, and the second with Andresa Goñi in 1973. The latter was recorded at the request of José María Jimeno Jurío. Both interviews contain recollections of domestic life, daily routines, and local festivities from the late 19th and early 20th centuries. The article also describes the main types of houses or pits to store snow and ice. This is the second and hitherto-unpublished part of that study.
