Abstract

The consumption of carbonated drinks, mainly lemonade and Seltz water, has always had a great popularity, since they had been consumed alike by the richest and the very poor people.

In fact, due to the popular nature of these kind of drinks, the factories that made them in Spain were thousands, since its manufacture process was extremely simple and, as it did not require of a great investment, many people of every social class decided to set up these kind of factories.

So we can find that, only in Navarre, were established at least 170 factories of carbonated drinks since the ended of the XIX century until the sixties, although nowadays this work, long ago parochial and almost handmade...
