Abstract

The first conclusions of the investigations of the stone olive oil press in Solchaga (County of Navarra) are presented in this article. This ethnographic element was meant for olive oil production, and it stopped being used in the mid 19th century. The olive oil press has several separated work areas: the milling area, the pressing area and the decanting area. These areas underwent technological changes made obvious by the overlapping of elements of two different oil extraction systems; they progressed from a direct pressure system (screw press) to a press based on the lever principle (lever-and-screw press).
