Abstract

This work looks at the study of confectionery and cooking in Navarra during the 18th century, through two recipe books considered to come from a monastic origin: “El Recetario de Marcilla” and el Cocinero Religioso by Antonio Salsete. However, after a thorough study of the first one, we can deduce that this confectionery recipe book attributed up to now to a monk from Marcilla, matches more properly a confectionery guild recipe book. The comparison with other recipe books from the same time allows us to date it within the second half of the18th century.
